So far this week...




As you may remember, my husband, Carlos, got all 4 of his wisdom teeth extracted last Saturday so I didn't cook food good enough for this blog all week. He is feeling better so I started cooking again Monday. I made penne pasta with meatballs and sausage in red sauce with parmesan cheese. The meatballs weren't anything fancy, just out of the bag from the freezer section in Publix. Everyone loved it though. It was enough for Carlos, me, my in-laws, and sister- and brother-in-law. My niece just ate the meatballs.


Tuesday I made cheese ravioli with red sauce and provolone cheese in the oven. The recipe also called for ground beef but I haven't done the groceries in a while so I didn't have. Either way it was delicious. Unfortunately I forgot to take a picture of this one, but I'm sure I'll make it again since it was so easy.


Today, Wednesday, I won't be cooking. In fact we just ordered Dominos pizza, which I haven't had in a while and love. But I was in the mood to cook so I made lemon thyme bars. Carlos didn't like them because he's not too fond of thyme, but both my in-laws and my brother-in-law liked them (he likes everything I make). Sooooo simple to make. I probably won't be cooking for the rest of the week because I won't be doing the groceries until this weekend; tomorrow is one of my best friend's birthday and I have school Friday and Saturday so I don't have time. But I already made my meal plan for the next two weeks and I promise I won't disappoint....very yummy recipes coming this way!

A night of good food and good company

Happy Sunday. Sorry I've taken so long to post, since this is Friday's dinner. But my husband took out his wisdom teeth yesterday morning so I've had my hands full. I completely forgot to take pictures of what I made for dinner and dessert but they came out looking exactly like the online recipe pictures.
My husband and I had friends over for dinner Friday night and I made Shrimp Marinara that my mother had made the day before and sent me the recipe. It was delicious! My husband's friend even had two servings. It was made in the slow cooker and only took 4 hours. I mixed Italian diced tomatoes, tomato paste, water, garlic, parsley, salt, oregano, basil, and pepper in the slow cooker for three and a half hours and then added cooked shrimp for another 20 minutes. I served it all over linguine and topped it off with freshly grated parmesan cheese. Yum!
For dessert, I made cheesecake brownies. I made regular box-brownies and topped it with a cheesecake mixture made from cream cheese, eggs, and sugar. I also added some flour, vanilla, and butter to the cheesecake mixture that someone recommended in their review of the recipe. Double yum!

Last night's dinner








Good morning everyone. Today I bring you pictures of what I made for dinner last night. I made meatloaf with mashed potatoes. Nothing special, but it was delicious! For the meatloaf, I mixed ground beef with sazon completo, garlic powder, paprika, ketchup, parsley, chives, and italian bread crumbs. The mashed potatoes were made with yukon gold potatoes, butter, cream cheese, sour cream, paprika, and chives. I don't really measure my ingredients, just whatever seems right and I taste as I go.
